Gonna play Devil's Advocate here...  why are you drilling holes through the "fingers" -- the most stressed and critical part of the roller nut?  Why not leave them full-thickness??

I never felt the need to insert rods through the fingers, but, I did mix up a quantity of resin glue thinned to the consistency of milk ( I used cascamite) and then dropped the finished nut into it. The thinned resin penetrated through most of the holes in the antler and made it all really strong

They would all be used in the middle ages and then you'll find them broken and discarded in a castle moat or a garbage heap. I've read in some original account on Spanish conquest of Aztec empire that Spanish were at one point resupplied with barrels full of crossbow strings and nuts. Probably pretty standardized in terms of size and not expected to last very much. Regarding safety of low quality nuts - those were people who enjoyed jousting with sharp weapons anyway.

The only good part of an antler is the pedicle. The part where the antler enters the skull below the coronet. This is dense bone with no fibrous centre. You can only get two from a skull.
