    All-

    Well I am getting close to finishing my first crossbow!
    This will be my hunting weapon this fall for all game,
    Including deer.

    I am going with a bolt rest instead of a groove ....because I want to be able to dial in the windage.

    So....what material should I use?

    Something slippery -- Delrin or other 'plastic', polished Lignum vitae or Ebony...  are you going to use a dovetail setup or some sort of geared mechanism underneath?  Seems like a decent set of sights would account for windage at least as readily -- bead-on-a-wire front and ghost ring rear peep is what I prefer.
